Crock Pot Pot Roast-Yum!




I know I've said it before, but I love a recipe that cooks while I'm at work. I love coming home to dinner ready! I'll prep several meals on Sundays, but this is one meal I can cook during the week because I'm not doing much but plugging in the Crock Pot!

This recipe is super easy and fast. It calls for a McCormick Slow Cooker packet found in the seasoning aisle (or whatever aisle they sell the packet seasoning).
Ingredients:
  • 1 2-3 pound rump roast
  • 1 packet of McCormick's Slow Cooker Pot Roast seasoning
  • several potatoes (we used red potatoes because they're slightly better for you)
  • baby carrots
  • 1 onion thickly sliced

Directions:
Place roast in crock pot. Make marinade according to directions on package. Toss in halved potatoes, baby carrots, and onion. Pour marinade over meat and veggies. Close lid and cook on low for 8 hours or high for 4 hours. Remove roast from crock pot and slice into smaller sections to serve.

100th Day Eve & Sugar and Soy Glazed Salmon!

So it is the eve of the 100th day of school. Now if you're in any other grade aside from Kindergarten this is probably no big deal. However, in Kindergarten: this is HUGE! This is the day kids sadly mistake for the last day of school (oh man do I WISH!). This is the day of the world's most awesome number (in the eyes of Kinder kids). This is also the day they wear shirts decorated with 100 things, parade around the entire school in a long line, go to 9 different classrooms to do activities that vary from making necklaces with 100 fruit loops, eating a trail mix with 100 things, and finding 100 ping pong balls. It is a big day!
These teachers have on glasses our kids will be sporting tomorrow!

Between making my shirt (since last year's was so bad that I will not wear it again) and getting everything ready for my little ones I needed a fast dinner. I came across this one last week while meal planning for this week and to my excitement it was a healthy one too! I left my camera at home, so there's no picture of this meal, but man it was delish! I made the marinade the night before and stored it in the fridge in the gallon size bag I was planning on putting the meat in. I do not like mornings so making the marinade before bed worked for me and took 2 minutes. I substituted chicken broth for the vegetable broth because it was all I had. This morning before I left for work I tossed in the salmon into the bag and closed the fridge door and walked away. I love the feeling that I'm working on dinner while I'm at work (loser I know!).
I served it up with corn, some Zatarain's yellow rice (omg is that stuff good!), and a salad. Like I said, it was great! We will definitely be having this again...and soon!

School's in and Dinner's Quick!

Hey All!

Long time no write...boo. With getting prepared for a new set of munchkins and helping my mom search for a new home here things have been CRAZY! I did however find a really good marinade for kebobs (however you spell that!). This is such a quick marinade to make and it's perfect to mix together and let the meat marinate over night or during your work day. I got the recipe from here and I've made them a few times already in the past month. Let me know if you try it!

Ingredients:

1/2 cup soy sauce
1 cup water
3 heaping tablespoons of brown sugar
1/2 teaspoon of garlic powder
1/2 teaspoon of ginger
2 tablespoons lemon juice

Directions:
Mix all together with a whisk, and pour over beef or chicken. Let marinate overnight or at least two or three hours. Grill steaks or chicken or to use for stir fry, just thicken it a bit with cornstarch and cold water mixture. Enjoy!

While we were out grilling I thought I'd update on the new neighbors. Construction is flying!

Other than that, the first day of school is OVER and I'm still here...barely. It will be an early night tonight for sure!
